COFFEE; THE ORIGINS

Robusta

Robusta is one of the most common coffee species. It is mostly grown in Africa and Asia, typically at low altitudes and in areas with low humidity. Robusta coffee beans have as much as double the concentrations of fat and also contain more caffeine, compared to Arabica. Its flavor is bitter and strong.

Arabica

Arabica accounts for more than 40% of the world’s coffee production and it includes all the varieties grown in Brazil. Arabica is grown from sea level up to higher altitudes (300 meters). There are three main subspecies of Arabica: Santos, Paranà and Rio Minas. Arabica beans have a characteristic oval shape and their taste is very delicate and aromatic.

Milds

So-called Milds are varieties of Arabica that are grown in Central and South America (except for Brazil). They are typically named after the country of origin and at times they are classified according to the altitude where they’re grown (which can reach 1000 meters). Milds’ taste is usually fresh, slightly acid and more aromatic compared to the Arabica which is dried in the sun.

Ethiopia

Ethiopia Sidamo is a variety of Arabica coffee grown in the Sidamo Province of Ethiopia.
